1 - red onion, chopped
3 - cloves of garlic
1 - small Chile
3 - small carrots
1 - Celeric root or omit and add extra potatoes
1 - leek
3 - potatoes
1 - fennel, or a few stalks of celery
1 Tbsp - salt
few sprigs of thyme
4.5 cups - vegetable broth
1 can - black eyed pinto bean (or bean of choice)
1 can - coconut milk
1/2 - lemon, juiced
parsley (optional)

  • Add onions to a very hot pan
  • Add all of the other vegetables along with veg broth when needed to prevent burning
  • Add thyme and seaweed
  • Put lid on and let sweat for 5 min
  • Add the rest of the veg stock and let boil for 30 min, until the potatoes are soft
  • Add the can of beans, coconut milk, and the lemon juice
  • Boil for 10 more min
  • Add your green herb and enjoy!
