1 14.5 oz - can light coconut milk
1/2 cup - mango
1/3 cup - chia seeds
1 cup - chopped fruit such as kiwi, orange, mango, etc
- Place the coconut milk and mango in a blender and puree until smooth. Pour the mixture into a medium bowl or large mason jar.
- Stir in the chia seeds and refrigerate for 20 minutes.
- Remove, stir again, and refrigerate for at least 3 hours or overnight to gel.
- Serve as is or place in a bowl and top with chopped fruit of your choice.
