1 1/2 cups - Old Fashioned Oats
1 cup - Pumpkin Puree
1/4 cup - Unsweetened Applesauce
1 Tbsp - Vanilla Extract
2 Tbsp - Melted Coconut Oil
1/4 cup - Unsweetened Almond Milk
1/4 cup - Pure Maple Syrup
1 tsp - Baking Powder
1/2 tsp - Baking Soda
1/4 tsp - Salt
1 tsp - Cinnamon
a small amount - Coconut oil spray

  • Preheat oven to 350 degrees
  • Lighly spray a mini muffin pan with coconut oil spray
  • Combine all ingredients in a food processor and mix until well combined
  • Pour into greased muffin tins and bake for 15 min, until a toothpick comes out clean
