Peri Peri Hasselback Potatoes

4 - large white potatoes
1/4 cup - olive oil- plus extra for drizzling
6 tbsp - nondairy yogurt
paprika- to sprinkle
garlic powder- to sprinkle
1 tbsp - hot sauce
1 tbsp - chopped chives- to serve
sea salt
For the Peri Peri Spice Rub
1 1/2 tsp - paprika
1 1/2 tsp - onion powder
1 tsp - garlic powder
1 tsp - dried oregano
1 tsp - ground ginger
1/2 tsp - cayenne pepper
1/2 tsp - salt

  • Preheat oven to 350°F
  • Place one of the potatoes on a cutting board and lay a wooden spoon on either side (these will provide a stopping point so that you don't cut all the way through your potatoes) | Take a sharp knife and Carefully Cut very thin slices crosswise along the full length of the potato, stopping when the knife hits the spoon handles Repeat until all the potatoes have been "hasselbacked"
  • Cut 4 rectangles of foil large enough to cover each potato | Put one potato in the center of each and pull the sides up to form little nests Drizzle 1 tablespoon olive oil over each potato, making sure the oil gets in between all the slices
  • Measure the spices for the spice rub into a small bowl and stir to combine | Use a teaspoon to sprinkle equal amounts of the spice rub over, and in between the slices of, each potato | Wrap the potatoes up in the foil ensuring there are no gaps Place on a baking sheet, put the pan in the oven, and bake the potatoes for 45 minutes (Take the pan out of the oven and set it down on a heatproof mat Turn the oven up to 425°F
  • Carefully open the parcels and flatten down the foil around the potatoes, being careful not to burn your fingers | Use the tip of a knife to lightly pry open the slices | Drizzle a touch more olive oil and sprinkle a little more salt over the potatoes | Put the pan back in the oven with the foil nests unwrapped and bake for 20-30 minutes longer
  • Spoon the yogurt into a small dish and sprinkle with paprika and garlic powder | Spoon some hot sauce on top and swirl it into the yogurt | Take the potatoes out of the oven | Lift them out of the foil nests and transfer to plates | Spoon the spice oil that's gathered in the foil nests over the potatoes | Garnish with chopped chives and serve with the spiced yogurt
