2 to 3 - large yams or sweet potatoes, cubed
2 cups - chopped kale
1 can - black beans
1 cup - corn
1 - red pepper, diced
1⁄2 cup - Peas
1⁄2 cup - diced onion
1 - garlic clove, diced
SPICE MIX
1⁄4 cup - water
2 tbsp - nutritional yeast
1 tsp - hot sauce
1⁄4 tsp - garlic powder
1⁄4 tsp - onion powder
1⁄2 tsp - cajun spice
- Cube and steam yams/sweet potatoes for 20-30 minutes, or until soft and easy to pierce with a fork.
- In a separate pan saute onions, garlic and corn together with the spice mix for 3-5 minutes on medium high heat.
- Add the rest of the ingredients including the yams and saute for approx. 10 minutes on medium heat. Serve hot with a green salad or other veggies
