1 1/2 cups - rolled oats
1 tsp - baking powder
1/2 tsp - salt
1 tsp - ground cinnamon
1/4 tsp - ground nutmeg
1 cup - unsweetened applesauce
1 Tbsp - ground flaxseed
3 Tbsp - water
1/4 cup - pumpkin puree
1 1/4 cups - unsweetened nondairy milk
1 tsp - vanilla extract
1 cup - peeled- finely diced apple
1/3 cup - raisins or other dried fruit

  • Preheat the oven to 350.
  • Lightly grease a 9 by 9 inch baking pan and set aside.
  • In a large bowl, whisk together the oats, baking powder, salt, cinnamon, and nutmeg. Set aside.
  • In a small bowl, whisk together the applesauce, flax egg, pumpkin puree, nondairy milk, and vanilla. Add to the oat mixture and stir to combine. Fold in the diced and raisins.
  • Pour into the prepared baking pan and bake for 30 to 35 minutes, or until golden brown on top and set.
  • Drizzle some peanut butter on top if you want and serve.
